Hi, I stumbled upon your journal and figured I would offer you some advice regarding challah.
If the dough is splitting like that when baked, it means one of two things: you overproofed it after forming, or you overmixed it. I can't tell you for sure without feeling the dough. Next time you make it, don't let it double in size after you braid it, because challah will continue rising during baking.
