Dude, this is my thing lately.
Go here:
www.coverville.com

Nina Gordon - Straight outta compton
The Gourds - Gin & Juice
Jonathon Coultron - Baby Got Back
Shannon Lawson - Let's get it on
Kieran Goss - Underneath your clothes
Grayson & Wonfor - The Boxer
The Sundays - Wild Horses

That's all I can think of now or have in front of me. I have a list of all my covers at work, which I can get to tomorrow. If you have a genre in mind, let me know. I have lots and lots and plan on getting more shortly.

I think that the prince version is the original. Twas Sinead who redid it.

To add more songs:
3 is a magic number - Blind Melon
King of Pain - Alannis Morrisette
Boyz N the Hood - Dynamite Hack
Never Tear Us Apart - Tom Jones and Natalie Imbruglia

Awwww, I immediately thought of Boyz N the Hood - Dynamite Hack! WAY TO STEAL MY #1 ANSWER!

Aside from that, I'm sure that you've probably got some Me First & the Gimme Gimmes song on your list already, but they have several CDs full of wonderful covers...

Also:
It's My Life - No Doubt

I may think of more later, too...?

Vanilla Ice - Too Cold.
This is a weird one. Vanilla Ice covering his OWN song from the 80s. I put it here merely for its weirdness value.

Now, my faves:
Tori Amos - Smells Like Teen Spirit
Brown Derbies - Carry On My Wayward Son (acapella -- amazing!)
Richard Cheese - Creep (lounge Radiohead?! I mean, awesome)
HIM - Wicked Game
Rage Against The Machine - Another Brick in the Wall
Reel Big Fish - Hungry Like The Wolf (HI-larious)

And, lastly, best cover ever:
Hayseed Dixie - Fat Bottom Girls
