I have to say that that would totally not appeal to me as a format, which means my opinion as worthless as to how it could best be handled for people who like to read that way.
I don't like subscriptions either. I read fast and I want it all right there. I hate cliffhangers and waits. But others feel totally the opposite, so I thought I'd throw it out there.
I hate subscriptions too, especially if they're open ended ones, rather than with a fixed end date.
It mostly dates back to when money was very tight and I had to account for every penny, but even now, I want to make a one-off purchase for a specific thing, not sign up to something open-ended.
Up to now, I've never tried subscribing to any serials. But I have enjoyed some books that originally appeared as serials - that format makes for very exciting pacing. So yes, I would definitely give it a try.
Chaz has a Patreon where he writes novels set at the Crater School, where he writes (roughly) one chapter a month (and when he doesn't have the chapter done he gives things related to the novels, like "Martian" recipes. When the novels are complete he creates an ebook and Patrons get those, too. Some people wait for the ebook, some read a chapter at a time. People are different.
