[recipe] honeyed lamb & pumpkin casserole

Down the beach and I thought I'd post this on lj rather than ripping it out of the magazine.

Honeyed lamb & pumpkin casserole

20g butter
1 large red onion, cut into 8 wedges
3 garlic cloves, crushed
60ml red wine vinegar
2 cinnamon sticks
6 (about 1kg) lamb forequarter chops, excess fat trimmed
900g butternut pumpkin, peeled, deseeded, cut into 3cm pieces

Interesting. The honey did make me squeam!
but I can see it actually 'working' very well.

Le sigh. Please. Please! Take me to the beach with you? We're being drowned over the last two weeks and this is getting dull, not to mention it's fucking freezing too and we have hail showers as well! Le sigh sigh, and I have this to contend with as a condition for perpetual summer weather, if the move over to Ireland goes through this month. Just think 'winter woolies and rain boots' in the hight of summer?

Don't really like pumpkin very much honestly. Hoping it will work with potato instead.

It was mostly overcast at the beach. We ate out and barbecued and went to markets. Was a lot of fun. Except for the part where I was horribly sick all week. I've now lost my voice completely. Good times :D
