I'll be making an eggplant-and-ricotta bake tonight, so that will be nice. (It's like lasagna, but with strips of eggplant instead of noodles. It sounds very very good.)

My mother used to make that. It is good.

Indeed. :) Can't believe I've never had it before. I think I was afraid of eggplant for a long time. It is a weird vegetable. But it's good stuff.

I usually don't like eggplant by itself, which was why I was surprised when I first realized how much I like eggplant in combination with a bunch of other things. Like in that, or in moussaka... mm... moussaka....
