I'll be making an eggplant-and-ricotta bake tonight, so that will be nice. (It's like lasagna, but with strips of eggplant instead of noodles. It sounds very very good.)
I usually don't like eggplant by itself, which was why I was surprised when I first realized how much I like eggplant in combination with a bunch of other things. Like in that, or in moussaka... mm... moussaka....
