sdwolfpup is going on a switchy diet. I like cooking and rather enjoy talking with people about food, so it seemed only natural to poke around and see if I could find any recipes that might work for this new diet of hers! And I first read the name of the second recipe as "Garlic Rubber Chicken." :-) In the third, I see no roasted red pepper - red bells do take on a lovely flavor when roasted first (and they are yummy to add to hummus!) but I don't think you actually need to do so for this recipe, it looks fine as is, but, you know, truth in advertising. :-)

... you know, it sounds fancier? *g* In all seriousness, we clipped that recipe from the newspaper back when I was in grade school and the incarnation that I just typed up from the recipe card has been modified so much that the original might have had roasted bell peppers, and I would never know! (And yet somehow the name stuck.) I think I am going to go back and modify that - thanks for the catch!

And the garlic chicken rub sounds delicious too, as does the beans and rice. I'm going to try some of these!
Side note: what kind of diet doesn't let you eat mushrooms?

Oh noes! If you make the beans and rice, know that I kind of screwed up when typing, and it is actually two TEASPOONS of Cajun seasoning, not TABLESPOONS. /0\ That would be oh so overwhelming on the spices! And the garlic rub chicken is kind of one of my favorite things ever. I was always in charge of dinner during high school and that was just so easy and yummy.
And I think that she is on some kind of a hypoallergenic diet, and since mushrooms are a common allergy, they are a no-no for the next six weeks. I think I would go stark raving looney with out them! I kind of love my fungus. *g*

*giggles* Well, it was mostly self appointed. My dad is the adult in my family who can cook, but he travels a lot for his job. So after all of grade school and my mom alternating between tuna fish casserole and cereal for dinner, I decided that I would cook dinner, because I like to cook, and because one can only eat so many bowls of Cheerios before you want to throw the bowl at the wall! :-D

I concur! But I really feel that it must have wacky punctuation to be a truly proper lj name. "I love! My fungus!" "I love my fungus!" "I ... love my fungus?" The possibilities are endless!
