I have never done anything like it before, so I don't think I'd be much help. But if someone who knows how to make a wiki would be willing to start one, I'd be happy to contribute once I knew what I was doing.
There was a post a while back about starting a wiki, but I don't know if it got anywhere.
If you have your own webspace, Mediawiki is a great wiki software to install and run.
If you don't have your webspace, there are wiki farms that host wikis. There might be ads for some. I've used wetpaint before and don't like it too much, but there are other options. Perhaps...wikia?
