ooh, that sounds good. I've seen steel cut oats in the store but never knew how to use them

It's so yummy. And the uncooked steel-cut oats are hard little pellets, so they need to be cooked a long time, but once they're done it makes a nice creamy porridge. And it's so good for you!

The only thing I had used steel-cut oats for before was for making Scottish oatcakes. They are kind of puzzling when you see them!

I've actually used a similar recipe where you replace 2 cups of the water with 2 cups of apple juice. And I used dried apricots and raisins. It was super yummy. Now I want to make a big pot of that! Yummmm.

Ooh, apple juice is a great idea! Actually in my version I add a big scoop of my bran pudding (wheat bran, flaxseed, applesauce and prune juice) which probably has a similar effect on the fruitiness, but I'm the only one who likes that stuff, so I didn't include it in the recipe.

And apricots are heavenly. I would use them all the time if they weren't so expensive! We do use them for a treat when I'm at my parents'.
