So he remains loyal to those in power as a
member of the Order of the Hound. I wonder
what will happen if Addison becomes king/ruler
of this world.

Reynard would do a little happy dance and get to say "I told you so". He believes Addison would be a good king even though Addison doesn't think so (hence why he backed out of it to become a knight).

I wonder why Addison doesn't think so. So he
doesn't think that he would be a good king (or
rather what it takes to be a king?)

He thinks it's too much work and too much stress and that he'd never be able to handle it all and make everyone happy. Of course, he IS only about 12 when his father dies and makes his decision to pass the throne to his aunt.
