Everytime I try to post it gets deleted by my good friend Bad Internet Connection.  So lets see....

In recent news I have fallen victim to the Empire Cookie.  Those who know me won't know this:  I have a closet addiction - and it is, you guessed it, Empire Cookies.  I have been getting my addiction fro Hamilton in the past - a place called Weils or ( Read more... )

I would like to apply to adopt a cookie. I will be in Toronto the first weekend of Febary and I fully expect to se you during that time, so we can do all the paper work then.

As for what makes me worthy of cookie foster care, I live in the country and quite a large stomach, so the little guy will have loads of room to romp and play.

Those aren't Empire Cookies!!! Those are Princess cookies!!! I friggin' *loved* Princess Cookies when I was little!!! I found a recipe a while back, but never tried it; if you say this is one is good, I will hang onto it. I've also developed a fondness for a recipe my mom found called "Raspberry Almond Christmas Bars", which I will forward to you, if you're interested. Pastry crust, raspberry jam layer, then a cake layer in marbled pink and green colours, with a pink, almond-flavoured icing. I now can't have Christmas without them.

I like Princess cookies better :) ya the one I used to make my batch called for 2 cups of butter! but they were to make 30 cookies (mine ended up a dozen as they were so huge....)

and YES I love adding to my recipe collection!!! bring it on!

Raspberry Almond Christmas Bars

Cake:
1 envelope Robin Hood Flaky Pie Crust mix (makes enough pastry for 2 8" pans)
¼ cup raspberry jam
½ cup butter, softened
2/3 cup sugar
2 eggs
2/3 cups flour
½ tsp salt.
red and green food colouring

Icing:
2 tbsps butter, softened
1 ½ to 2 cups sifted icing sugar
2 tbsps cream or milk
1 tsp almond extract

1. Prepare pastry according to package for one crust unbaked pie shell (remember, this makes enough for two).
2. Line 8" pan(s) with pastry. Spread with raspberry jam.
3. Cream butter and sugar. Add eggs, beating until light and fluffy. Add flour and salt. Blend well. Divide batter in half. Colour half pink and half green. Drop by spoonfuls alternately in pan. Tap pan gently on counter. Bake at 350F for 35-40 minutes or until toothpick inserted in centre comes out clean. Cool completely.
4. Beat frosting ingredients together until smooth and creamy, adding enough icing sugar to make a spreading consistency. Spread over cooled squares.

Makes 24

youre in for the next batch then. All the ones I have now are spoken for that I have actually made a list of those who want one next time around. :) they are HUGE and well worth the wait!
