1) Episode II, Attack of the Clones: It's everything I'm interested in, politics and characterization, with action scenes used to bolster both rather than just...being there so we can see people hit each other.
2) Episode VI, Return of the Jedi: Luke and his father reuniting, Leia kicking butt, the Emperor being truly creepy for the first time. All the scenes just worked.
3) Episode III, Return of the Sith: The tragedy was breathtaking, even if we did know it would be all right in the end.
4) TIE: Episodes IV and V, A New Hope and The Empire Strikes Back. Good, entertaining movies, always worth watching.
5) Episode I, The Phantom Menace. A lot I didn't like about this one, which docks it from the others, but it still had some great moments.

I would say:
1 -- ROTS
2 -- A New Hope
3 -- ESB
4 -- AOTC
5 -- ROTJ
6 -- Phantom Meanace, man that was bad, LOL. The entire movie is good for only one line: "Anakin Skywalker, meet Obi-Wan Kenobi." LOL
