Picard (TNG): "Make it so."
Picard (TNG): "Engage."
Kirk (TOS): "What does God need with a starship?"
Bones (TOS and reboot): "I'm a doctor not a ________." (escalator or something to that effect)
There've been many versions of ST. TOS (the original series), TNG (the next generation), DS9 (Deep Space 9 -- it's a space station instead of a ship), Voyager (got lost and spent seven seasons crossing space to get home), Enterprise (the newest television attepmt -- prequel to TOS), and the reboot.
All you really need to know is Kirk and Picard are argued to be the best of the captains. Kirk had a thing about losing his shirt most episodes and sleeping with every hot alien he saw, and Picard was a huge fan of Sherlock Holmes holodeck simulations.
Really, it'd help if I knew what you were looking for, because there's just too much Star Trek info in my head.
