well to be fair they fixed up Whiskey' face in the future at some point as well, so I wouldn't be surprised if they could. plus he had to be fixed up since when Boss Man Major took over his body he was clearly unblemished.
I read that spoiler too, but in an interview Joss said that Epitaph One would guide the seasonal arc (which in the episode itself, they clearly had 'memories' from AFTER the end of episode 12, so that might be what he is referring to. we'll see that build up as the pieces of the future 'memories' come together and fit into place)--I don't think this is a bad thing per say. If there is a definite arc that had plot points and moments that needed to be hit, I think it would give the series more structure. Last season wasn't very structured with hints at Alpha being thrown in at random and filler episodes taking up most of the first half of the season.
Obviously season 2 will have to show us when Echo/Paul form that little partnership (and how she comes to be able to 'be herself' but also whomever she's been programmed as), when Doc Saunders starts up her romance, when the Big Whig beams into Victor's body, when Topher goes nutterz, etc etc.
