bean stew

So often when I have an idea for a perfect bean stew the result is less magnificent than I imagined and I am stuck with a large pot of only-okay food to eat up before I can make something else. Thanks for the bean post. I soak beans for 6-12 hours, drain and rinse, then freeze them for 12 hours to whenever. I read in a bean cookbook several years ago that freezing the beans after soaking greatly reduces the flatulence and bloating chemical (I forget its name), and experimentation has borne this out.

I didn't have any beans in my freezer for some reason; now I have some white beans and some chickpeas soaking on the counter. The white beans will combine with a pork shoulder bone (already in the freezer from last month's feast) for some fine soup this weekend. Dunno what the chickpeas will be yet, but it will be good to have them in reserve.
