I'll respond over there when I get home and can check my references but it looks like many sources just use Capricorn for fermentation.

I don't know if something went wrong or I'm in moderation, but my post over there isn't showing up. If I was confident I could post, I would follow up that I added the "Still" symbol from Frutiger to my food page.
