They look tasty. However, maybe it's because you whisked them for double the amount of time that they went gooey? I know that if you beat eggs and things for too long, they just fall flat instead.

I had thought about that, but the recipe just said whisk until it's almost tripled in volume, with a suggested time in brackets, so I don't think that's what caused it. At 12 minutes it was still slightly clear-looking, but the longer I whisked, the thicker it seemed to get. I think it needs some sort of protein to keep the bubbles trapped in and make it stiffer, perhaps?

Also, I just finished packing, your request is safely wrapped and ready for transport ;)

oh my god amazing! the two things that as a vegan i miss are marshmallow, specifically tunnocks teacakes (being from glasgow they're like our national dish) and merengue or however the feck you spell it. the latter i can live without but i'd give my lifet leg for a vegan tunnocks teacake so i wish you all best in yr attempts to make marshmallow!! i also discovered the shop next to me sells halal haribo, which are vegan. but i haven't eaten them in about ten years so i bought a packet and it was really disappointing. haribo are flavourless!

God yes, I used to love marshmallows sooo much! I think Tunnocks teacakes would be pretty easy to make in comparison with actual marshmallows; I;ll get on it if I can find a good mould! If I remember right, the marshmallow inside them is very soft and is held in place with a coating of chocolate, and could probably be replicated with Ricemellow, thich is like marshmallow fluff, I don't know if you ever had that? It's vegetarian but not vegan. You've inspired me to work on them! If you'd like me to get some Ricemellow fluff let me know; it's about $5 in stores then postage once I'm back in the UK will probably be around the £2 mark if you wanted to Paypal me the money for it? :)

I think I messed up what I wrote - Ricemellow itself is vegan, but the stuff it replicates (marshmallow Fluff) isn't :)
