Banana Pumpkin Muffins.

Continuing with my pumpkin obsession, here's the recipe for banana pumpkin muffins, again adapted from BitterSweet. The taste of banana is a little stronger than I would have liked and as a consequence it drowns out the pumpkin, so next time I'll play around with the quantities a bit. Do you mean some sort of pumpkin pie spice mix (ie: something dry and light) or more like the cans of pre-mixed pumpkin puree and spices? Because bringing back canned food is going to be way too heavy I'm afraid :S

Ohhh, don't worry then, I'll just get some actual pumpkins, hehe! (at least I can do that at the mo, so annoying that they're available for such a short time!) So, for this recipe, would that just be 1 1/4 cups of pumpkin then? I find the cups thing a little confusing, don't suppose you know what that'd be in grams?!

Yup, should be the same I think! You can buy cup measurers from pound shops, and some measuring jugs have cup measurements on them too, they're so useful for when you're following recipes from American cookbooks in particular. I don't know what it'd be in grams because it's a measurement of mass, not weight (eg: 1 cup of pumpkin would be a different weight to 1 cup of sugar/flour/etc), but so long as you're consistent you'll be fine!

Also, I'm not sure if you know this or not, but if you can get hold of a small pumpkin (called a sugar pumpkin, I think) rather than a field pumpkin (the ones on sale for carving), then they're supposed to be more suited to baking as they have a sweeter, more concentrated taste and are less stringy :)
