key lime soup

The key lime pie turned out to be somewhat of a disaster. It didn't set up, even with extra cooking time... so I've just mixed in half a tub of vegan cream cheese substitute and half a tub of dairy-free whipped topping and put it back into the pie shell. It's in the freezer and we'll sample it soon. I'll be trying another version in the morning, ( Read more... )

YAY, indeed. :)

The pie in the deep-freeze... it might be salvageable as a faux-ice-cream-pie.

I think I'm going to call Quantum Leap and beg them for their key lime pie recipe. MMmmmMMmmMm.

Did your pie have egg yolks in it? Pie fillings that have cornstarch and egg yolk can be problematic if the yolk isn't cooked enough, as an enzyme in it will de-starch the starch, causing the pie to not set. At that point it can either be cooked further or jury-rigged. :) The good thing about baking mistakes is that they're often still pretty good. I wish you much luck.

Today's pie had more cornstarch and that seemed to do the trick. I'm still going to play with some flavor variances, though...

We had the same such luck getting some vegan peanutbutter fudge to set up , had to ditch it all it decided to remain sludge against our wishes :(

However the vegan chocolate pie, perfecto ! We burned thru 2 of those with the quickness.
