Went home at lunch to check on Maddie and it is apparant that she's been messing with her tail, despite the much larger E-Collar. Some of the sutures appear to be gone, and her tail is pinker

I would ask about some really good sedation. Sure she'll sleep away a week, but she'll get the time to heal. Also E-collar 24/7 and maybe a little bitter apple around the wound (not in it obviously).
Good luck with her. I knew a dog like this in the shelter, they ended up having to go back and dock it like a rottie tail because we couldn't stop him from hitting it on things. But they never tried sedation.
