I have corned beef brining in the fridge...and half a bushel of beets to wash and store. Somewhere.

I really do need a root cellar.

Agreed!

I still haven't washed those beets, though. The garage is now root-cellar temperature, so I have little incentive. Eventually T. will turn on the heat out there and I will be forced to do something with the beets. I wonder if I can ferment them like sauerkraut...

I'm not sure how I feel about sauer-beets. Either it's a brilliant plan, or there's a chance that good beets will be wasted in the experiment.

That's my feeling too. I've done the same thing with onions and they were quite lovely. Also, I have enough beets that if I lose some to an experiment I will not feel too sad.
