GOOD Carrot Soup!!! Didn't think this would be THIS good! And easy. Had for dinner.
1 1/2lb chopped carrots
3 cups low sodium chicken broth
2 tsp grated ginger
1/4 cup oj
3/4 cup whole milk
1 onion - minced
2 tbs butter

boil broth, throw in carrots. In another pot (your big good one) saute onion in butter, add 1/2 tsp salt. Then add 2 tbs grated ginger, saute until fragrant. Pour in boiling carrots and broth. Boil for 10 more minutes until soft. Throw it in a blender (in batches, to be safe, or you can use a stick blender - careful with pot.) Stir in milk and OJ. Salt and pepper to taste. Serve hot with chives. WOW! Sweet! Amazing! You'd think it would be nasty but WOW!

ARGH! I've lost the recipe card for my ginger chicken noodle soup. As soon as I find it, I'll post it. For now, here's a really quick, tasty quiche.

Sausage Apple Quiche

2 Pie crusts

1 lb. breakfast sausage (I love the Jimmy Dean's sage, but any kind works)

1 lg can (15 oz I think?) Apple Pie filling (I've made apple pie filling too, if you're cutting prepackaged foods)

1 dozen large eggs (mix in two-5 or 6 egg batches, in case you don't need all dozen eggs)

-Brown sausage and drain.

-Press crusts into 2 8" pie pans.

-Divide sausage and apples into crusts.

-Beat eggs with salt and pepper to taste. Pour over sausage & apple mix, leaving 1/4" of crust showing at the top.

-Bake at 350 degrees F for 45-60 mins. until center is shiny but not wet.

I sometimes add cheddar cheese to it as well, either mixed in or just on top.

I just can't even think of a caption for this. It makes me feel like I need a shower just looking at it, lol.
