Throw the beets in a stir fry. It sounds odd, and it will turn everything red, but it works really well...I have some odd friends who are big on the going green and buying locally.

I feel like the whole turning everything red thing might turn my dinner into a crime scene, and that would really put me off stir fry. :P

Although, that might really be the way to go because it could cover up whatever it is about beets that doesn't appeal to Kevin. I might have to give it a try.
