You realize that with those specific rules, your sugar day will have to be the same day each week and allows for no variation, right?

I didn't describe this very well, lemme try again...

Whenever I have an indulgence day, I want to have at least six sugar-fast days around it (some of which can be before), or in the days following (which can be interspersed with one-dessert days).
I do not want to sugar fast more than six days in a row.
While the most obvious configuration is 6/1/6/1, reality is going to be more complex, with quite a few interspersing one-dessert days (like the slice of cake I found in the break room just a few minutes ago).
I'm over by a few, and expect to indulge at a wedding in a few weeks and of course Thanksgiving and Christmas, but overall the theme is temperance and I'm no longer worrying too much about the exact numbers on the high-sugar days.
