I have this continual need to make my baked goods more complex in flavour than they probably need to be, but the result does taste very much like a gingerbread.
Shall have to look around for graham flour here. Worst case, there's a family-run grist mill about an hour south of us, and I'll see if I can pick some up when I get barley flour.

1.5 dl honey
1.5 dl flour (either white or graham)
1 egg
75 g melted butter
(1 tsp vanilla sugar)
Preheat oven to 200 C
Mix all ingeedients and pour into a greased tin
Bake for 20 minutes.
With the graham you can pretend it is healthy, but with the regular flour it is more normal as cakes go.
With the "honey" directive I would also have considered making gyngerbrede, but I'm strange.
