Crock Pot Help!

I am making chicken enchiladas tonight and I wanted to throw some chicken in the crock pot to shred later. It is not frozen. I have done frozen breasts covered in chicken stock for 8 hours and they turned out perfect. Not sure about thawed chicken. Should I check it at 4 hours and go from there? Don't want to end up with chicken paste.

I don't have any advice for the chicken. But I've done a vegan version in the crock pot, where I covered the chicken in enchilada sauce and let it slow cook all day at a low temp. It turned out so good.

oooh, I didn't even think of using enchilada sauce. That sounds good.
