Like most of the things on this list, making flavored sugar is really an awesome thing to do pretty much any time, regardless motivation.
Here's how:
Get -fresh rosemary or culinary lavender or lemon zest or whatever you want your sugar to taste like. -a jar or other sealable container -sugar
Fill the jar with alternating layers of sugar and zest/rosemary/lavender/whatever. Seal it. Ignore it for several weeks to several months, depending on how patient you are. If you are so inclined, strain out the zest/rosemary/lavender/whatever. Cook with it. Or eat it. Or put it in little jars with bows on them and give it to people as gifts.
