Anyway, here's the recipe we went with as written :
* 1 cup eggplant, diced & cooked until tender
* 3/4 cup cooked rice
* 1 egg
* 3 tablespoons flour
* 1/2 tsp salt
* pinch black pepper
* dash red pepper sauce
* 2 Tbs grated onion
* 1/2 cup sharp or mild Cheddar cheese, shredded
Drain eggplant into bowl. Mix with remaining ingredients. Cover and chill thoroughly. Heat bacon drippings or oil in a heavy skillet over medium heat; drop a mixture by tablespoonfuls and fry until nicely browned on both sides.
I did a whole eggplant which was about 2.5-3 cups once cooked. So I basically tripled the recipe. I also added about 3/4-1 cup of slivered almonds, crushed up a little.
They soak up a LOT of oil and since eggplant has kind of an oily, smoky flavor to begin with it was a little too much. I'm going to try cooking them on a pancake griddle next time to avoid that. Good luck!

Yeah, one of the greatest benefits of working at home is that I have more time - or rather, more of an opportunity - to prepare more of my own meals instead of buying something or snacking.
Not that I don't ALSO do that. But it's easier to convince myself not to.
