Well, we really wanted to make the Eggplant-Almond Patties we used to make, but couldn't find the recipe, so it was Eggplant Patties - and we added almonds.

Anyway, here's the recipe we went with as written :

* 1 cup eggplant, diced & cooked until tender
* 3/4 cup cooked rice
* 1 egg
* 3 tablespoons flour
* 1/2 tsp salt
* pinch black pepper
* dash red pepper sauce
* 2 Tbs grated onion
* 1/2 cup sharp or mild Cheddar cheese, shredded

Drain eggplant into bowl. Mix with remaining ingredients. Cover and chill thoroughly. Heat bacon drippings or oil in a heavy skillet over medium heat; drop a mixture by tablespoonfuls and fry until nicely browned on both sides.

I did a whole eggplant which was about 2.5-3 cups once cooked. So I basically tripled the recipe. I also added about 3/4-1 cup of slivered almonds, crushed up a little.

They soak up a LOT of oil and since eggplant has kind of an oily, smoky flavor to begin with it was a little too much. I'm going to try cooking them on a pancake griddle next time to avoid that. Good luck!

On Tonight's Menu:
half a can of d.coke
small bag classic lay's
handful of Krackel

If I'm still hungry
brown rice, spicy tofu, green peas

On the off chance I'll make it to the gym before it closes, and then get hungry again:
red wine and chunky peanut butter.

Why I can't lose the last pounds is clear; I need someone regularly in my life who cooks.

Heh. Moving to Oklahoma anytime soon?

Yeah, one of the greatest benefits of working at home is that I have more time - or rather, more of an opportunity - to prepare more of my own meals instead of buying something or snacking.

Not that I don't ALSO do that. But it's easier to convince myself not to.

Well, really, my excuse is that I don't want to/like to. Laziness. I certainly didn't cook when I was unemployed.

No, I get that. Same for me, really. I just figure "I'm already here, and everybody ELSE has to eat to, so...might as well."
