Yeah, I was kind of freaked when I realized I'd taken in that much for the second day in a row. (Usually, I have to really push, and then go light for the next few days.)
However, I think it's helped my sinuses and my complexion clearing up. (One week tomorrow, and that alergic reaction STILL isn't gone!)
Dude I adore Cool Whip. I eat it all the time; Cool Whip Lite is one of my favorite desserts all the time. When I'm hard up, I drizzle Magic Shell over it, but I tend to go overboard on Magic Shell, so it's a special treat.
Oh, and brussel sprouts? Are FOUL. Great for you, so be glad you like them, but yuck. I bury them sometimes in things like rice/beans, but then they ruin the dish.
Have you tried Quinoa? It's great to use instead of rice because it's much better than white rice & cooks way faster than brown rice. Also Kashi has a 7-grain pilaf which is nice, but takes a while to cook. A small scoop with veggies so good.

I've special-ordered Quinoa at our health food store. I happen to love brown rice, but it's always nice to try something new.
