Roast in Crockpot

This recipe is called spicy beef roast, but my husband that cannot take spicy at all likes it. It is from Diabetic Slow Cooker Recipes, which is a great cookbook, and is in the 0-5 carb section. I use extra garlic and chipotle hot sauce and tend to leave out the salt ( Read more... )

This is from the calendar that you gave me for x-mas...excuse any of my typos..

Italian Beef au Jus

Makes 8 servings
3-5 lv. bonelss beef roast
10 oz. pkg. dry au jus mix
1 pkg. dry Italin salad dressing mix
14 1/2 oz. can beef broth
half a soup can of water

1. Place beef in slow cooker.
2. Combine remaining ingredients. Pour over roast.
3. Cover. Cook on Low 8 hours
4. Slice meat and spoon onto hard rolls with straining spoon to make sandwices. Or shred with two forks and serve over noodles or rice in broth thickened with flour.

Note: To thicken broth, mix 3 Tbsp. cornstarch into 1/4 cup cold water. Stir until smooth. Remove 1/2 cup beef broth from cooker and blend into cornstarch water. Stir back into broth in cooker, stirring until smooth. Cook 10-15 minutes on High until broth becomes of gravy consistency.
