One of my roommates invited me out with her friends to go to a Latin dancing class and I chickened out (she invited me out again tonight to a school function and I'm so nervous I can't see straight I'M NO GOOD AT THIS SOCIALIZING THING CRAP I SHOULD PROBABLY GO SHOWER OR SOMETHING AAAUGH), and Netflix wasn't working so I couldn't finish Ouran High School Host Club (um guys i think i kind of really really love that show), so what's a girl fresh from a grocery shopping trip with cookie ingredients to do?

I dun darn did it. And let me tell you, it's hard to make cookies without a standing mixer. Stuff gets EVERYWHERE and the beaters get all gummed up eventually.
I like making cookies. I use an old family recipe and it's the best I've ever tasted. It's therapeutic to put on some music and make some delicious baked goods.
I didn't account for one thing, however.
ALTITUDE.
My recipe is equipped for a humid climate closer to sea-level, where every batch comes out fluffy and thick.
Not flat and chewy.
However...
Flat or not, they're still the best cookies in the entire world. :D So, a word of advice: when adjusting to a drastically new climate, always make adjustments in your favorite recipes if they call for baking.
