Banana Oat Bread

I tried another riff on Jen’s banana bread recipe, this time quite heavy on the oats.  The results weren’t quite as sweet and dessert-like as my first variant, but it made for a nicely hearty breakfast food, and it confirmed that the batter can be used to hold together an absurd amount of oats.  A useful discovery for anyone who needs more fiber ( Read more... )

Since the last two or three bananas tend to be neglected often around my house and I'm always looking for breakfasty foods, and I'm a sucker for oats, I'm definitely going to try this.

Oats have been one of my favorite pregnancy foods. They're uber-fiberful, and they can keep me full for a good while! This is the first banana bread I've ever eaten that hasn't left me wanting second breakfast. Do let me know how yours turns out!

The maple syrup sounds like a nice touch. This sounds like an awesome breakfast food.

The syrup was on a whim, when I spied a mostly-empty bottle in the cupboard. I may have to try one with even more maple syrup in it sometime. :)

BTW, what fruits can be used in place of the banana in banana bread?
