Cookbook Challenge, Week 9: Wild Rice & Quinoa Muffins

The Week 9 Cookbook Challenge was to make a breakfast bread-type thing. Specifically, one from the breads & muffins chapter of Mollie Katzen's Sunlight Café, if you have it. Sounds absolutely delicious, but best cooked in large batches! The one time I cooked quinoa I found it to be a real pain - particularly cleaning out the grit. Ultimately it tasted like couscous, but took a lot more work.

Really? I didn't find it to be much trouble at all. I rinsed the quinoa a few times, like rice, brought it to a boil, reduced the heat, ignored it for 20 minutes or so. Have you tried cooking quinoa in your rice cooker? I bet that would work, since the process is the same. Yay! Recipe Zaar confirms that you can make quinoa in a rice cooker.

My quinoa had grit in it that was amazingly tough to rinse out. Yours was less foilsome, I take it? Also, my recipe called for soaking before cooking. Rice cooker, you say?

Mine seemed relatively clean, and none of the recipes I've seen call for soaking it before cooking. Try a different brand next time, see if it has less grit. Good luck!
