I like the fudge system - roll 4 fudge dice (each dice has two plus, two minus, two blanks.)

Rolls are also often opposed. I find the system useful - simple and you tend to get the normal expected results- but you get occasional swings of results.

FATE is, essentially, an extension of Fudge. But I do think that mechanics with 0-centred dice have a lot to recommend them.

I don't like FATE dice very much. Rolling 4 dice seems a complicated way of getting a result. I prefer the d6-d6 method (as used in Nexus: The Infinite City and some FATE implementations) although it does produce more extreme results.

Exploding d6-d6 is used in Feng Shui, the Greatest RPG of All Time (TM), so I'm definitely down with that method. FATE/Fudge offers a +4 one time in 81, whereas d6-d6 offers +5 one time in 36. With Fudge dice the variance/maximum ratio decreases the more of them you roll. You might be able to use 3dF for more effective varince but that might require rescaling somewhere along the line.
