So I'm coming pretty close to quitting my job, to be honest. Because where I'm from not having at least a ten minute break for a shift over four hours is pretty damn illegal.

I believe the law here is a minimum 1/2 hour break after five hours, and a max working day of 7.5 hours unless the agreement includes special benefits / penalties

This is blatantly the time at which you realise everyone has forgotten what it's like at your level. I'd resign as well. They need to sort this out. Why can't your boss or the group manager make the calls, or something? They should never send all managers to a conference out of state anyway - it's really bad policy - you need a good spread of cover.
The other thing is to leave the doors open, and announce loudly to all customers that you're going to the loo as you haven't been for however long, feel free to steal since your boss won't let you close up. There's bound to be someone who'll sympathise and watch things even if they aren't meant to. I remember a rubbish job my Mum had where I ended up watching things for her so she could take a break.
