It would take a lot of work, but interesting climbing structures where she can go up stairs on the wall, across the room on elevated paths, have fun hiding places, could help. I knew someone who built her cats an exercise wheel even and they thought that was fun.
The mice are probably a less practical suggestion, since it would be difficult to set it up so they could not escape into undesirable places in the house. Less destructive than mice but harder to acquire - mayflies. Our cats LOVE playing with mayflies when I can catch one and bring it in. Mayflies really loved to hang out in the chamomile I planted a couple of years ago, no idea why, but it made them relatively easy to catch.

Not as destructive as mice is they should get hidden before she gets them, and she's already proven she likes to hunt bugs...

It's not a bad idea, especially in combination with some of the others. I just feel so badly for her because she's quite clearly asking for play, but I haven't figured out just yet what will do it for her.
She's had a few toys that she's *adored* but they all end up missing. (In the toilet, I'm pretty sure there's about a dozen glitterballs under our bed, under the fridge, you name it. If a small ball made out of tinsel can get there, I'm pretty sure there are some.)

One day when Thes was in one of her "Pick me up and cuddle me in your arms until they fall off because I'm huge and heavy but so cute you can't resist and I'll purr at you" moods, I took her out into the back yard. (She loves to stare out the window or the screen door, so I thought she might like it.)
She didn't panic in the "omg flailing legs and claws and pain and reaking out cat someone please help before she kills me" kind of way, but she did huddle into me and started making these low concerned "mrow. Mrow. MROW. MROW!" noises. She made it really really clear that she Did Not Want To Be In The Outside Thanks.
