I never have time to make breakfast in the morning so I made some scrambled egg cups to heat up in the morning or take to work. They are basically little omelets that I whisked together in a bowl and poured into a greased cupcake pan. They puff up and get very fluffy and are really good reheated and last for a long time!

I made a Sausage Egg McMuffin with feta cheese this morning so maybe i'll put feta in them next time too.
