I'm not exactly sure why it ceased to exist. My parents worked at a mission school there and later the school closed. That may be why.

Why all the different kinds of salt? Different cooking properties, or different flavors?

Both.

I have 11 varities acually, I looked.

lavender salt
red lava sea salt
black lava sea salt
superfine sea salt
Himalayan pink salt
kosher flake salt
sea salt
smoked sea salt
fleur de sel
sel gris velvet
fine crystal sea salt

Some of them have different textures and therefore blend or go onto food differently, some are flavored and therefore add an additional flavor to foods.

It is a food geek thing I guess.
