Get some madeira cake (type of sponge cake) and cut it into thin slices. Then wrap and compress those cake slices around the ice cream ball until its totally covered. Make sure you put about two layers as some may break off during the deep frying process.
Put it back into the freezer until it's rock hard again. Then when its time to cook, just dump it in oil thats very hot because you just want to fry or crisp the outside. If it's not hot enough, the coating may break and the inside will leak.

I've never tried Fried Mars Bars though I've heard about it. It sounds..... almost disgustingly rich! haha. Don't think I could take it!
