I know that a lot of biology majors are headed toward health care or medical school, and while I have an interest in biology I don't desire to be in the health care field

does your school have a cognitive science program?
my school had a cognitive science department, but didn't have an undergraduate major in cognitive science. i could have done my own cog sci major if i had started there as a freshman, but i transferred in as a junior, which didn't give me enough time to get things together. i ended up majoring in psychology and minoring in cognitive science (and philosophy).
though i went with the linguistics and philosophy side of things, there's a biological/neuroscience component of cognitive science.

It would make sense if you declare psychology then narrow down to specific fields of interest from there. Undergraduate psychology will include a wheighty biopsych as a course anyway. Have fun!
