I'll see if i can find out what goes into the absolutely-to-die-for beat ravioli for you. Though that might be just a tidge more trouble than you were looking for. How about a borscht?
It's one of my favorite dishes. I've also made it with feta when I don't want to shell out for the soft goat cheese.
Otherwise, just roast them with potatoes and carrots (really any other root vegetables work), chopped to uniform sizes, tossed with olive oil, salt, pepper, and rosemary. Spread on a cookie sheet, and roast for an hour in a 400 degree oven.
