Wander from hotel to hotel, gaping at the lobbies / restaurants / indoor malls / casino decorations / flights of architectural fancy.
Things I liked to stare at (may or may not still be there): - the Cirque figurine display at (I think) the Mirage - the human statues at the Venetian - the Bellagio's rotating display room - the super-expensive displays at the Forum Shops at Caesar's Palace (go to the Vosges store and express your interest in tasting their exotic chocolates; they're pretty free with the samples)
Can't help you with gambling options. K did most of the gambling when we were in Vegas; my constitution is not suited to gambling. Instead I just stared around at things. Fortunately, Vegas does not lack things to stare at.
Of course you could forget the hotels, leave the strip, and go play with some heavy equipment instead.
