Oooh… waffles!

But, importantly, there are two kinds of waffles, Brussels and Liege. Brussels waffles - the kind I adore - are crispy and light; Liege ones are more cake-like and denser in texture. The latter are the kind most frequently found in the UK.

There's no indication of which kinds of waffle can be made in each of those irons. The only irons I've found before that I was certain could produce the right stuff cost €600, as I recall. /-8

Aren't liege the ones that are covered in sugar as well? I've never had Belgian waffles in Belgium; however, would the difference not be found mostly in the batter rather than the iron...?

And anyway, those sorts are both BELGIAN waffles; what I'd be interested in is a non-Belgian waffle maker anyway. The flatter kind, much denser, eaten in the US with butter and syrup.

Though in all honesty what I truly want is two kinds of waffle irons. :D

Would the flatter, denser waffles you mean be stroopwafelen?

I definitely like the light, crispy Brussels waffles, with just a light dusting of caster sugar. I've only had them once or twice in Belgium, but good ones can be got along most of the Normandy and Brittany coast, for some reason.

The utterly best waffles I've ever found are in the gauffrier artisanale in Honfleur. The little waffle seller barrow outside the Geneva Hilton comes a respectable - but hardly close - second.
