Conference season is fast approaching. Next week I'll be at IGARSS (Vancouver), and of course there's Smallsat (Utah) in August. There are a lot of interesting-looking IGARSS sessions, although since it's large enough to be a multi-track conference, we'll see which talks I'll actually manage to attend. It's nice in that it's a mountain at sea level, so you can both climb and breath. There's not really any view until you reach the top.
If you happen to have a vehicle, I'd recommend a drive north on the Sea-to-Sky highway. It's very pretty, though I've not been on it since it was upgraded for the Olympics.
If your conference was at UBC I could recommend some things, but seeing as you're downtown I can't imagine it would be worth the trek out there.

UBC has a nice campus, though it's distressingly hard to get breakfast early in the morning when an East Coast stomach tells you it's time. I believe the Starbucks at the University Village Market opens at 5 AM, and that's your best bet. On-campus food is generally not great.
I have no idea if it's your cup of tea, but Wreck Beach is a nice place to watch the sun set over the ocean. Clothing is optional, but nobody will give you any grief if you bundle up in as many layers as you wish.
If you're interested in particle physics, you may want to visit TRIUMF. Organized tours in the summer are at 1 PM each week day. If that doesn't work, I may be able to swing you a custom guide. Google TRIUMF and my last name for the family connection.
