14valentines Day 10: Women of Colour I made an amaaaaazing dinner tonight.
Roast Chicken
3 1/2(ish) pound chicken
1/2 lemon
wee bit of butter
wee bit of salt
wee bit of pepper
other spices as desired
Preheat oven to 435F. Pat dry chicken, cut lemon into quarters and stick into cavity. Take a wee bit of butter and rub it over the chicken. Take wee bits f salt and pepper and other assorted spices, and sprinkle over chicken. Place chicken in roast pan, cover, and cook for 45-50 minutes until temp in thigh is 160F. Once done, remove from oven and let sit for at least 5 minutes. Remove to serving plate or cutting board, carve and serve.
Rice
2/3 cup of rice
1 1.3 cup of water
wee bit of butter
pepper
Combine in pot, stir and bring to roiling boil. Cover and turn heat down to being barely on, and leave simmering for 20 minutes. Remove from heat and stir, replace lid and let sit for 5 minutes. Serve.
Glazed carrots
as many carrots as desired
enough water to cover them
1 tbsp. honey
Cover carrots with water in pot, bring to boil. Check carrots after 5 minutes, piercing with a fork. Once done drain and return to pot. Drizzle in honey, stir. Serve.
