Nevermind the whole knitting of the pullover, the fact that I went back and fixed the horrible seaming jobe I did on 1/2 of one of the armholes and then fixed the neckline makes me prouder than anything.

This is an approximate recipe for my favourite pancakes; it's an adaptation of the "recipe" my dad taught me for pancakes (basically the lesson was "just keep adding things until it's right. You'll figure it out, eventually." Oh Dad.) At this point I don't even have the measurements anymore, just approximates, so you may want to play around with it a bit yourself.

~ 1 cup of flour
~2 teaspoons of sugar
~1 rounded teaspoon of baking powder

mixed in a bowl. add

1 large egg
~cup of milk
~1.5 teaspoons vanilla
~1 tablespoon oil

mix well, but not for long tenough to remove all the bubbles.

heat a pan on medium/high then bring it down to medium. using a 1/4 cup measurment, pour onto pan. the batter should firm up a bit, and when the bubbles come up to the surface in the center and pop, slide a spatula underneath and lift up to see if the bottom is a golden brown- if so, flip the pancake for another minute or so. if not, return to pan and slightly increase the heat.

this recipe usually yields about a dozen pancakes- the pan will need the heat lowered about halfway through the process, as it get to the point where it will burn on the bottoms before bubbling and setting the middle.

best with syrup, jam or nibbled on bare throughout the rest of the day. good with tea.
