Chocolate Peanut-Butter Cookie Sandwiches
Yes. These are chocolate sugar cookie sandwiches with peanut butter buttercream filling.
I used this chocolate sugar cookie recipe that I love.
I did two sized of cookies - smaller circles that only the star cutter fit into, and larger circles that I used a few of my little cute cutters on (snail, cherries, turtle).
Solid bottoms again. The chocolate sugar cookies make a lot less than that sugar cookie recipe, so I was careful to make exactly enough to match the two up because I didn't want to waste any cookies xD
I used this recipe rather than modifying the one I already use, because I wasn't sure how much fat is generally in peanut butter and I wanted to try a recipe with milk in it because it's meant to come out smoother. I ended up having to add quite a bit of milk (maybe my peanut butter wasn't very fatty? I used creamy Jif brand) and I think I should have added another tablespoon or so to get the smoothness most people prefer...but I honestly don't care...xD
The peanut butter buttercream so delicious OMG. If you like peanuts or peanut butter at all, you should try it.
It's also wicked good on the cookies ahhhhhh
I'm thinking about maaaybe selling cookies on Etsy. Thoughts? I've shipped cookies before (even to the UK), no problem.
