I just got a knitting DVD in the mail yesterday that teaches how to knot cables, bobbles, and lace. Mah poor brain!

Could you do your ribbing with a K3 P3 rib so that you could use 72 or 78 stitches?

You can pretty much cast on any number of stitches and just reduce or add before you start the beret portion. So, if 79 works, you could always do 80 stitches in rib, and then on the first stitch of the beret pattern, knit two together so the numbers work.
