Celia Keenan-Bolger is definitely the most booklike Eponine. Her interpretation and unique voice fuse the musical and book characters very nicely.
I guess I'll just say the obvious answer--On My Own. Not the whole wahhh I hate my life bit, but her clear sense of imagination, and slight craziness. Especially when sung by CKB (I think there's a bootleg on youtube if you haven't seen it), the song is a great sum of her character.
Frances Ruffelle and Celia Keenan-Bolger are my favourites because are the most like Eponine in the book: scrappy and tough and not just wishy-washy little princess whiners. <3
