Here's a question for the group, posted at dogeared 's excellent suggestion.

Like many, part of my resolution for 2009 is to eat better and cook more, and when it comes to lunch, that's fine - largely because salads are easy and variable and fun, and because I like yogurt. Dinner is -so- much harder, especially in the winter, when I'm craving ( Read more... )

I'm vegetarian so I can't give you advice about beef. But I make a lot of crustless quiche sorts of things in the winter. You can add low fat cottage cheese to eggs and spinach and get a really yummy quiche sort of thing that is pretty good for you.

If you buy dried beans and lentils, a world of casserole-y / curry-ish / soupy goodness will become available to you. They'll go into pretty much anything that's cooked with liquid.

Enchiladas!

I take all sorts of things shredded leftover meats beans, corn, refried beans - spinach would work. mix with a little enchilada or mole sauce and then roll in corn tortillas. Top with more sauce and some cheese. Bake until bubbly -- they freeze and reheat well too.

I took some chicken thighs the other night and poached them in some chicken broth and then shredded them. Now I'm all set to turn them into enchiladas.

Using the same principle, you could also turn the same kind of base ingredients into an eclectic lasagna
