I talked to my professor today about graduate school

What, the general GRE is available throughout the year at testing centers (Computerized ones). Its only subject ones that are offered at certain times.

But I don't want to take a computerized test.

You should because the paper test is a lot different from the computer one.

The computer one is adaptive; and i have a feeling its easier to get a better score on it.

You didn't find it troublesome being unable to skip or go back or anything? Or being able to apply certain strategies (like answering all the easy ones first in a set then going back to do the medium level difficulties, so on and so forth?)
